Upgraded Dex version with security patch

We’ve upgraded Dex on all our clusters with a new version (v2.27.0) that contains a fix for a security vulnerability.

Note that although the security vulnerability is considered critical, none of our clusters were impacted as it only affects the SAML connector of Dex, which we don’t use.
